King salmon collars are rich, fatty, and tender—a V-shaped cut located just behind the gills and pectoral fin. Considered a delicacy and a "fisherman's secret," they are highly prized for their fatty texture and often described as the "spare rib" or best part of the fish, ideal for grilling or broiling until crispy. This cut is difficult to overcook; we recommend marinating in soy sauce and grilling until they are quite crispy.
Each package contains 2 collars, approximately 0.5–1.25 pounds per package. King salmon is considered the most superior of the wild Pacific salmon species. The fish has a wonderfully rich flavor and contains the most omega-3 fatty acids of any other salmon species.
We handle each king with love and care to avoid bruising this beautiful fish. King portions are processed by hand, carefully vacuum sealed, and then flash frozen to maintain freshness. They range from 0.5–1.25 lbs per portion. Please note: they are not pin-boned.
